    Prepare the Ingredients

    Dice the bell pepper and onion into small pieces. Set aside.

    Cook the Chorizo

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chorizo and cook until browned, about 5-7 minutes. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the diced bell pepper and onion, and sauté until softened, about 5 minutes.

    Cook the Potatoes

    Add the diced potatoes to the skillet with the vegetables. Season with salt and pepper. Cook until the potatoes are tender and crispy, about 10-15 minutes, stirring occasionally.

    Combine Ingredients

    Return the cooked chorizo to the skillet and mix well with the potatoes and vegetables. Create two wells in the mixture and crack an egg into each well.

    Cook the Eggs

    Cover the skillet and cook until the eggs are done to your liking, about 5 minutes for sunny-side up.

    Serve

    Serve the skillet mixture with warmed tortillas and salsa on the side.
