    Prepare the Potatoes

    Dice the O.P. potatoes into small cubes. Heat olive oil in a skillet over medium heat, then add the diced potatoes. Season with salt and black pepper. Cook until the potatoes are golden brown and tender, about 10-15 minutes.

    Add the Red Chili

    Once the potatoes are cooked, add the red chili to the skillet. Stir well to combine and let it cook for an additional 5 minutes to heat through.

    Add the Cheddar Cheese

    Sprinkle the shredded cheddar cheese over the potato and chili mixture. Cover the skillet with a lid and let it sit for a few minutes until the cheese is melted.

    Cook the Eggs

    In a separate pan, prepare the eggs any style (scrambled, fried, or poached). Once cooked, place the eggs on top of the cheesy potato mixture.

    Toast the English Muffin

    While the eggs are cooking, slice the English muffin and toast it until golden brown.

    Serve

    Garnish the skillet with chopped chives and serve with the toasted English muffin on the side.
