Prepare the Batter
In a large mixing bowl, whisk together the flour, baking powder, salt, and granulated sugar until well combined.

Mix the Batter
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

Preheat the Pan
Preheat a large non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.

Cook the Paddy-Cake
Pour enough batter into the skillet to form a large pancake (about 1 cup of batter for each pancake). Cook for about 3-4 minutes, or until bubbles form on the surface and the edges look set. Flip and cook for another 2-3 minutes until golden brown.

Serve
Transfer the pancake to a serving plate. Dust with powdered sugar before serving. Optionally, serve with maple syrup or fresh fruit.
