Cook the Potatoes
In a large skillet, add a tablespoon of butter over medium heat. Add the diced O.P. potatoes, season with salt and pepper, and cook until golden brown and tender, about 15-20 minutes. Remove from skillet and set aside.

Prepare the Sausage Gravy
In the same skillet, add the breakfast sausage and cook until browned and crumbled. Sprinkle the flour over the sausage and stir to combine, cooking for 1-2 minutes. Gradually add the milk, stirring constantly until the gravy thickens. Season with additional salt and pepper to taste.

Assemble the Skillet
Cut the buttermilk biscuits in half and place them in the bottom of the skillet. Top with the cooked O.P. potatoes, followed by the sausage gravy. Finally, place the cooked eggs on top of the gravy.

Serve
Serve immediately while hot, garnished with additional black pepper if desired.
