    Prepare the Potatoes

    Wash and dice the O.P. potatoes into small cubes. Heat olive oil in a large skillet over medium heat. Add the diced potatoes and season with salt and black pepper. Cook until the potatoes are golden brown and tender, about 15-20 minutes.

    Add the Green Chili

    Once the potatoes are cooked, pour the pork green chili over the potatoes and stir to combine. Allow the mixture to simmer for about 5 minutes, allowing the flavors to meld.

    Cook the Eggs

    In a separate pan, cook the eggs to your preference (scrambled, sunny-side up, etc.).

    Assemble the Skillet

    Once the eggs are cooked, remove the skillet from heat. Sprinkle the shredded cheddar cheese over the chili and potatoes. Top with the cooked eggs.

    Serve

    Serve the skillet hot with warm flour or corn tortillas on the side.
