    Prepare the Hollandaise Sauce

    In a medium bowl, whisk together the egg yolks, lemon juice, and a pinch of salt. In a saucepan, melt the butter over low heat. Gradually whisk the melted butter into the egg mixture until the sauce is thickened. Season with salt and black pepper to taste. Keep warm.

    Cook the Ham

    In a skillet over medium heat, lightly brown the ham slices until heated through. Remove from heat and set aside.

    Poach the Eggs

    In a saucepan, bring water to a simmer. Crack an egg into a small bowl and gently slide it into the simmering water. Repeat with remaining eggs. Cook for about 3-4 minutes for soft yolks. Remove with a slotted spoon and drain on paper towels.

    Toast the English Muffins

    Split the English muffins in half and toast them until golden brown.

    Assemble the Eggs Benedict

    On each toasted English muffin half, layer a slice of ham, followed by a poached egg. Spoon the warm hollandaise sauce over the top.
