    Cook Quinoa

    Rinse 1 cup of quinoa under cold water to remove any bitterness. In a medium saucepan, combine quinoa and 2 cups of vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until quinoa is fluffy and liquid is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

    Chop Vegetables

    While the quinoa is cooking, chop the red bell pepper, cucumber, red onion, and cherry tomatoes into bite-sized pieces. Add these to a large mixing bowl. Tear the spinach leaves into smaller pieces and add them to the bowl as well.

Dressing

    Make the Dressing

    In a small bowl, whisk together 3 tablespoons of lemon juice, 1 tablespoon of Dijon mustard, 1 tablespoon of honey, 0.5 teaspoons of salt, and 0.5 teaspoons of black pepper until well combined.

Combine & Serve

    Mix Ingredients

    Once the quinoa has cooled slightly, fluff it with a fork and add it to the large bowl with the chopped vegetables. Pour the dressing over the mixture and toss everything together until evenly coated.

    Garnish

    Chop the fresh parsley and sprinkle it over the salad for added flavor and garnish.
