Preparing the Salad

Wash and Prepare Vegetables

Rinse the spring mix under cold water and spin dry or pat dry with a paper towel. Peel and slice the cucumber into thin rounds. Dice the large tomato into small cubes.

Combine Salad Ingredients

In a large mixing bowl, add the washed spring mix, sliced cucumber, and diced tomato. Gently toss to combine.

Add Cheese

Sprinkle the shaved Parmesan cheese over the salad and give it another gentle toss.

Prepare the Bread

Preheat your oven to 375°F (190°C). Cut the slices of bread into small cubes.

In a bowl, combine the bread cubes with olive oil, garlic powder, salt, and black pepper. Toss until the bread is evenly coated.

Spread the seasoned bread cubes on a baking sheet in a single layer. Bake for 10-15 minutes, or until golden brown and crispy, stirring halfway through.
