Spicy Chicken Quesadillas Recipe

Prepare Chicken

    Season the Chicken

    In a bowl, combine pulled chicken with chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Mix well until the chicken is evenly coated with the spices.

    Heat Chicken

    In a skillet over medium heat, add the seasoned pulled chicken. Cook for approximately 5-7 minutes until heated through, stirring occasionally.

Assemble Quesadillas

    Prepare Tortillas

    Take one tortilla and place it on a clean surface. Add a portion of the heated chicken, followed by a sprinkle of cheddar jack cheese and a few spoonfuls of pico de gallo.

    Fold and Grill

    Fold the tortilla in half to create a half-moon shape. In a skillet over medium-high heat, add a little oil, then place the folded tortilla in the skillet. Cook for about 2-3 minutes on each side until golden brown and crispy.

Prepare Toppings

    Mix Sour Cream

    In a small bowl, mix the sour cream with the seasoning for sour cream (1 tsp). Stir well to combine.

    Slice jalapeños into rings or strips, depending on your preference.
