    Prepare the Dough

    In a small bowl, dissolve the sugar and yeast in warm water. Let it sit for about 5 minutes until frothy.

    Mix Ingredients

    In a large bowl, combine the flour and salt. Once the yeast mixture is frothy, add it to the flour mixture. Mix until a dough forms.

    Knead the Dough

    Transfer the dough onto a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.

    Let it Rise

    Place the dough in a greased bowl, cover it with a towel, and let it rise in a warm place for about 1 hour until doubled in size.

    Shape the Bites

    Once risen, punch down the dough and divide it into small pieces (about 1-inch each). Roll each piece into a ball.

    Prepare for Baking

    Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Boil the Bites

    In a large pot, bring 8 cups of water to a boil and add the baking soda. Drop the pretzel bites into the boiling water for about 30 seconds, then remove and place on the baking sheet.

    Bake

    Brush the bites with melted butter and sprinkle with coarse sea salt. Bake for 12-15 minutes until golden brown.

Pepper Jack Cheese Sauce

    Make the Roux

    In a saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes until lightly golden.

    Add Milk

    Slowly whisk in the milk, stirring constantly until the mixture thickens, about 3-4 minutes.

    Add Cheese and Seasoning

    Remove from heat and stir in the shredded pepper jack cheese, garlic powder, salt, and pepper until smooth. Adjust seasoning to taste.
