Onion Rings

Prepare the Onions
Slice the onions into 1/4 inch thick rings. Separate the rings and set aside.

Make the Batter
In a bowl, mix together the flour, cornstarch, baking powder, salt, black pepper, and beer until smooth.

Heat the Oil
In a deep pan or fryer, heat the vegetable oil to 375°F (190°C).

Coat and Fry
Dip each onion ring into the batter, then carefully place into the hot oil. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.
Fried Pickles

Prepare the Pickles
Drain the sliced dill pickles and pat them dry to remove excess moisture.

Make the Coating
In a bowl, mix together the flour, cornmeal, cayenne pepper, and salt.

Heat the Oil
In a deep pan or fryer, heat the vegetable oil to 375°F (190°C).

Dip each pickle slice into the egg mixture, then dredge in the flour mixture. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Activate the Yeast
In a bowl, combine warm water, brown sugar, and yeast. Let it sit for 5 minutes until frothy.

Make the Dough
In a large mixing bowl, combine flour and salt. Add the yeast mixture and knead until a smooth dough forms.

Let the Dough Rise
Cover the dough and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Shape the Pretzel Bites
Preheat the oven to 425°F (220°C). Roll the dough into small balls (about 1 inch) and place them on a baking sheet.

Boil and Bake
In a large pot, bring water to a boil and add baking soda. Boil each pretzel bite for 30 seconds, then remove and place on the baking sheet. Brush with melted butter and sprinkle with coarse salt. Bake for 12-15 minutes until golden brown.
