Method
Bacon Preparation
Prepare the Bacon
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. Place the bacon slices on the baking sheet and bake for about 15-20 minutes or until crispy.
Coat with Brown Sugar
Remove the bacon from the oven and immediately sprinkle brown sugar over each slice while hot. Return to the oven and bake for an additional 5 minutes until the sugar has caramelized.
Cool and Crumble
Once the bacon is done, remove it from the oven and let it cool on a wire rack. Once cooled, crumble the bacon into small pieces.
Jalapeño Filling Preparation
Prepare the Cream Cheese Mixture
In a medium bowl, soften the cream cheese at room temperature for about 15 minutes. Mix in half of the crumbled bacon and set aside.
Stuff the Jalapeños
Slice the roasted jalapeños in half lengthwise and remove the seeds if desired. Fill each half with the cream cheese mixture generously.
Top with Pepper Jelly
Spoon a small amount of hot pepper jelly over the cream cheese filling in each jalapeño half.
Assembly and Serving
Add Bacon Topping
Sprinkle the remaining crumbled bacon over the stuffed jalapeños.
Serve
Arrange the jalapeño poppers on a serving platter and serve warm for the best flavor.
