    Prepare the Bacon

    Cook the thick-cut bacon in a skillet over medium heat until crispy. Remove from skillet and place on paper towels to drain excess grease.

    Make the Onion Straws

    Slice the large onion into thin rings. Soak the rings in buttermilk for at least 30 minutes. In a separate bowl, combine all-purpose flour, cornstarch, salt, and black pepper. Heat vegetable oil in a deep fryer or large pot over medium-high heat.

    Fry the Onion Straws

    Remove onion rings from buttermilk, allowing excess to drip off, then dredge them in the flour mixture. Fry in batches in the hot oil until golden brown, about 2-3 minutes. Remove and place on paper towels to drain.

Assembly

    Assemble the Dish

    In a serving dish, layer the aged cheddar cheese, crispy bacon, and fried onion straws. Drizzle with honey BBQ sauce over the top. Serve immediately.
