Trim the Brussels Sprouts
Remove any yellow or damaged outer leaves from the Brussels sprouts and trim the stem ends. Cut each Brussels sprout in half lengthwise.

Prepare the Black Garlic
Mince the black garlic cloves finely to release their flavor.

Grate the Parmesan Cheese
Using a grater, finely grate the Parmesan cheese and set aside.

Preheat the Oven
Preheat your oven to 200°C (400°F).

Season the Brussels Sprouts
In a large mixing bowl, combine the halved Brussels sprouts with olive oil, minced black garlic, salt, and black pepper. Toss until the Brussels sprouts are evenly coated.

Roast the Brussels Sprouts
Spread the seasoned Brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and crisp, tossing halfway through for even cooking.

Finish with Truffle Oil and Parmesan
Once the Brussels sprouts are roasted, remove them from the oven and drizzle with truffle oil. Sprinkle the grated Parmesan cheese over the top and toss gently to combine.
