    Pour the whole milk into a large pot and slowly heat it over medium heat until it reaches 190°F (88°C). Stir occasionally to prevent the milk from scorching on the bottom.

    Once the milk reaches the desired temperature, remove it from the heat and add the white vinegar or lemon juice. Stir gently for about 30 seconds to incorporate the acid.

    Curd Formation

    Allow the milk to sit undisturbed for about 5-10 minutes. You should see the curds separating from the whey.

Curds Extraction

    Strain the Curds

    Line a large bowl with cheesecloth and carefully pour the curds and whey into the cheesecloth. Allow the whey to drain for about 10 minutes.

    Rinse and Salt

    Rinse the curds under cold water to cool them down and remove any remaining whey. Transfer the curds to a bowl and sprinkle with salt. Mix gently to combine.
