Bacon Preparation

Prepare the Bacon
Preheat your oven to 375°F (190°C). In a mixing bowl, combine brown sugar and ground cinnamon. Lay the bacon strips on a baking sheet lined with parchment paper. Sprinkle the brown sugar-cinnamon mixture generously over the bacon.

Bake the Bacon
Bake the bacon in the preheated oven for 25-30 minutes, or until crispy and caramelized. Flip the bacon halfway through cooking to ensure even coating. Once done, remove from the oven and let it cool on a wire rack.

Sauté the Onions
While the bacon is baking, slice the onions thinly. In a large skillet, heat olive oil over medium heat. Add the sliced onions and sauté for about 5 minutes until they start to soften.

Braise the Onions
Pour in the beer and reduce the heat to low. Allow the onions to simmer for about 20-25 minutes, stirring occasionally, until they are caramelized and the beer has mostly evaporated. Set aside.

Assemble the Sandwiches
Toast the burger buns lightly if desired. On the bottom half of each bun, layer some of the beer-braised onions, followed by a few strips of brown sugar and cinnamon bacon, and then a generous sprinkle of smoked cheddar cheese.
