Teriyaki Rice Bowl

    Cook the Rice

    Rinse 1 cup of jasmine rice under cold water until the water runs clear. Combine rice and 2 cups of water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed. Remove from heat and let sit covered for 5 minutes.

    Prepare the Ahi Tuna

    While the rice is cooking, season the ahi tuna steaks with salt and pepper. Heat a non-stick skillet over medium-high heat, add a drizzle of oil, and sear the tuna for about 1-2 minutes on each side for medium-rare. Remove from heat and let rest before slicing.

    Assemble the Bowl

    In a serving bowl, layer the cooked jasmine rice. Top with sliced ahi tuna, steamed broccoli, and drizzle with teriyaki sauce. Garnish with sliced green onions and sprinkle sesame seeds on top.

Classic Nashville Hot Chicken Mac & Cheese

    Cook the Chicken

    In a skillet, heat 2 cups of vegetable oil over medium-high heat. Season chicken thighs with hot chicken seasoning. Fry the chicken for about 8-10 minutes on each side until golden brown and cooked through. Remove the chicken and let it rest before shredding.

    Cook the Macaroni

    In a large pot, boil salted water and cook 2 cups of elbow macaroni according to package instructions. Drain and set aside.

    Make the Cheese Sauce

    In the same pot, melt 4 tablespoons of butter over medium heat. Stir in 1 cup of all-purpose flour, cooking for 1-2 minutes. Gradually whisk in 2 cups of milk, stirring constantly until the sauce thickens. Add 2 cups of cheddar cheese and stir until melted and smooth.

    Combine Ingredients

    Add the cooked macaroni and shredded hot chicken to the cheese sauce. Mix well to combine.

    Top with Breadcrumbs

    Transfer the mac and cheese to a baking dish. Sprinkle 1 cup of panko breadcrumbs on top. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes or until golden brown.

    Serve

    Let the mac and cheese cool for a few minutes. Serve hot, garnished with pickles on the side.
