    Cook the Bacon

    In a large skillet over medium heat, cook the thick-cut bacon until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate to drain excess fat.

    Prepare the Beer-Braised Onions

    In the same skillet, remove excess bacon fat, leaving about 1 tablespoon. Add sliced onions and cook over medium heat until they become translucent, about 5 minutes. Pour in the beer, add salt and pepper to taste, and let it simmer until the beer reduces and the onions are caramelized, about 10-15 minutes.

    Make the Smoky Mayo

    In a small bowl, combine mayonnaise and smoked paprika. Mix well and adjust seasoning with salt and pepper if necessary.

    Assemble the Dish

    On a serving platter or individual plates, layer the crispy bacon slices, spoon the beer-braised onions over the bacon, and crumble blue cheese on top. Drizzle the smoky mayo over the dish before serving.
