    Prepare the Wings

    Rinse the chicken wings under cold water and pat them dry with paper towels. In a large bowl, toss the wings with cornstarch until they are evenly coated.

    First Fry

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the wings in batches for about 8-10 minutes or until they are golden brown and crispy. Remove and drain on paper towels.

    Make the General Tso’s Sauce

    In a saucepan over medium heat, combine soy sauce, rice vinegar, sugar, minced garlic, minced ginger, and chili oil. Bring to a simmer, then mix cornstarch with water and add it to the sauce, stirring until thickened.

    Second Fry

    Increase oil temperature to 375°F (190°C). Fry the wings again in batches for an additional 3-5 minutes until extra crispy. Drain on paper towels.

    Combine and Garnish

    In a large bowl, toss the fried wings with the General Tso’s sauce until well coated. Serve hot, garnished with sesame seeds and chopped scallions.
