Prepare the Vegetables
Preheat the oven to 400°F (200°C). In a bowl, toss the diced potatoes and sliced carrots with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until golden and tender.

Prepare the Steak
While the vegetables are roasting, crush the black peppercorns coarsely and rub them onto both sides of the steaks. Season with additional salt.

Cook the Steak
In a large skillet, heat olive oil over medium-high heat. Add the steaks and cook for 3-4 minutes on each side for medium-rare, or until your desired doneness. Remove the steaks and let them rest.

Make the Brandy Cream Sauce
In the same skillet, add butter and let it melt. Stir in brandy and scrape the bottom of the skillet to deglaze. Reduce the heat and add heavy cream, cooking until the sauce thickens. Season with salt to taste.
