    Prepare the Portobello Mushrooms

    Preheat the oven to 400°F (200°C). Clean the portobello mushrooms and remove the stems. Brush them with olive oil and season with salt and pepper. Place them on a baking sheet and roast in the oven for about 20 minutes, or until tender.

    Caramelize the Onions

    While the mushrooms are roasting, slice the onion thinly. In a skillet, melt 2 tablespoons of butter over medium heat. Add the onions and a pinch of salt. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes.

    Assemble the Patty Melt

    Once the mushrooms are done, remove them from the oven and slice them if desired. In a skillet, melt 1 tablespoon of butter over medium heat. Assemble the sandwich by placing a slice of rye bread in the skillet, followed by a layer of caramelized onions, a layer of roasted portobello, and two slices of Swiss cheese. Top with another slice of rye bread.

    Grill the Sandwich

    Cook the sandwich for about 4-5 minutes on one side, or until golden brown. Carefully flip the sandwich and add the remaining butter to the skillet. Cook the second side for an additional 4-5 minutes, or until the cheese is melted and the bread is crispy.

    Serve

    Remove the sandwich from the skillet and let it cool for a minute. Slice in half and serve warm.
