    Prepare the mushrooms

    Preheat your oven to 200°C (400°F). Clean the wild mushrooms with a damp cloth and slice them if they are large. In a bowl, toss the mushrooms with olive oil, salt, and black pepper.

    Roast the mushrooms

    Spread the seasoned mushrooms on a baking sheet in a single layer and roast in the preheated oven for about 15-20 minutes, or until they're tender and caramelized.

    Prepare the scallion oil

    While the mushrooms are roasting, finely chop the scallions. In a small saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped scallions and sauté for 1-2 minutes until fragrant. Remove from heat and set aside.

    Toast the bread

    Slice the crusty bread into 1-inch thick slices. Brush each slice with the remaining olive oil and place on a baking sheet. Toast in the oven for about 5-7 minutes, or until golden and crispy.

    Assemble the crostini

    Spread a generous layer of herb goat cheese on each toasted slice of bread. Top with the roasted mushrooms and drizzle with the scallion oil and balsamic vinegar.
