Method

Preparation

  1. 1

    Marinate the Pork

In a large bowl, mix orange juice, lime juice, minced garlic, cumin, and oregano. Add pork shoulder and marinate for at least 2 hours or overnight in the refrigerator.

  2. 2

    Cook the Pork

Preheat oven to 300°F (150°C). Place marinated pork in a roasting pan and cover with foil. Roast for 3-4 hours until tender. Shred the pork and set aside.

  3. 3

    Assemble the Sandwich

Spread whole grain mayo on one side of each slice of bread. On the other side, layer shredded mojo pork, smoked ham, provolone cheese, and house made pickles.

  4. 4

    Grill the Sandwich

In a skillet, melt butter over medium heat. Place sandwich in the skillet and grill until golden brown and cheese is melted, about 3-4 minutes per side.
