Prepare the Beets
Preheat the oven to 400°F (200°C). Wrap whole beets in aluminum foil and roast for about 45 minutes or until tender. Allow to cool, then peel and dice.

In a large bowl, combine the roasted beets, sliced apple, grated white cheddar, chopped pecans, and torn Bibb lettuce.

Make the Dressing
Drizzle the pickled mustard seeds over the salad and toss gently to combine. Serve immediately.
