Preparation of Sausage

    Make the Sausage

    In a bowl, combine ground pork, garlic powder, fennel seeds, salt, black pepper, and crushed red pepper flakes. Mix thoroughly and form into small patties.

    Cook the Sausage

    Heat a skillet over medium heat and cook the sausage patties for about 5-7 minutes on each side until browned and cooked through. Remove from skillet and set aside.

Preparation of Vegetables

    Prepare the Potatoes and Onion

    Peel and dice the potatoes into small cubes. Slice the smoked onion. In the same skillet, add a little oil if needed and sauté the potatoes for about 10 minutes until tender. Add the smoked onion and cook for an additional 3-4 minutes until soft.

Scrambling the Eggs

    Scramble the Eggs

    In a bowl, whisk together the eggs, heavy cream, salt, and black pepper. In the same skillet used for the sausage and vegetables, reduce the heat to low and add the egg mixture. Stir gently with a spatula, folding the eggs until they are softly scrambled, about 5-7 minutes.

    Combine Ingredients

    Once the eggs are softly scrambled, gently fold in the cooked sausage, sautéed potatoes, smoked onion, and fontina cheese. Cook for an additional minute until the cheese is melted and everything is heated through.
