Preparing the Artichokes

    Prepare the Artichokes

    Trim the stems and remove the tough outer leaves from each artichoke. Cut the artichokes in half lengthwise and scoop out the fuzzy choke in the center. Place them in a bowl of water with lemon juice to prevent browning.

    Season and Grill

    Preheat the grill to medium-high heat. Drain the artichokes and pat them dry. Brush with olive oil, and season with salt and pepper. Place on the grill cut-side down and cook for 5-7 minutes until charred. Flip and grill for another 5-7 minutes until tender.

Making the Spreads

    Prepare the Truffle Goat Cheese Spread

    In a mixing bowl, combine the goat cheese, truffle oil, and chopped fresh herbs. Mix until smooth and creamy. Set aside.

    Prepare the Piquillo Pepper Preserve

    In a small saucepan, combine the piquillo peppers, honey, and red wine vinegar. Heat over low heat, stirring occasionally, for about 5 minutes until warmed through. Remove from heat.

Serving

    Serve the Grilled Artichokes

    Place the grilled artichokes on a serving platter. Top each half with a generous dollop of the truffle goat cheese spread and drizzle with the piquillo pepper preserve. Garnish with additional fresh herbs if desired.
