Method

Prepare the Pastry Dough

  1. 1

    Mix the Dry Ingredients

In a large bowl, whisk together the flour, sugar, and salt.

  2. 2

    Cut in the Butter

Add the cold butter, cut into small cubes, and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  3. 3

    Add Water

Gradually add cold water, one tablespoon at a time, mixing until the dough comes together.

  4. 4

    Chill the Dough

Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Filling

  1. 5

    Mix the Filling Ingredients

In a medium bowl, combine fresh berries, sugar, cornstarch, lemon juice, and cinnamon. Toss gently to coat the berries.

Assemble and Bake

  1. 6

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 7

    Roll Out the Dough

On a floured surface, roll out the chilled pastry dough to fit a 9-inch pie dish.

  3. 8

    Add the Filling

Transfer the rolled dough to the pie dish and fill it with the berry mixture.

  4. 9

    Top and Seal

Roll out another piece of dough for the top, place it over the filling, and crimp the edges to seal.

  5. 10

    Brush with Egg Wash

Brush the top crust with beaten egg and sprinkle with sugar.

  6. 11

    Bake

Bake in the preheated oven for 40-45 minutes or until the crust is golden brown and the filling is bubbling.

  7. 12

    Cool and Serve

Allow to cool for at least 15 minutes before serving.
