    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.

    Prepare the Eggs

    In the same skillet, crack the eggs and season with salt and pepper. Cook to your desired doneness (sunny-side up, over-easy, etc.).

    Toast the Brioche

    While the eggs are cooking, toast the brioche slices until golden brown.

    Assemble the Sandwich

    Spread mayonnaise on one side of each brioche slice. On one slice, layer the avocado (sliced), cooked bacon, fried eggs, and American cheese. Top with the other slice of brioche.

    Serve

    Cut the sandwich in half and serve warm.

    Wash and dice the potatoes into small cubes.
