    Cook the Bacon and Sausage

    In a large skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside, leaving the drippings in the skillet. Add the crumbled sausage and cook until browned.

    Sauté the Vegetables

    In the same skillet, add the sliced onions and diced bell peppers. Sauté until the onions are caramelized and the peppers are charred, about 8-10 minutes.

    Cook the Potatoes

    Add the diced potatoes to the skillet with the onions and peppers. Season with salt, pepper, and paprika. Cook until the potatoes are tender and crispy, about 15-20 minutes, stirring occasionally.

Gravy and Eggs

    Make the Sausage Gravy

    In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute. Gradually whisk in the milk, stirring constantly until the gravy thickens. Stir in the cooked sausage and season with salt and pepper to taste.

    In another skillet, fry the eggs sunny side up to your desired doneness.
