Cook the Bacon and Sausage
In a large skillet over medium heat, cook the chopped bacon until crispy. Remove and set aside, leaving the drippings in the skillet. Add the crumbled sausage and cook until browned.

Make the Sausage Gravy
In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute. Gradually whisk in the milk, stirring constantly until the gravy thickens. Stir in the cooked sausage and season with salt and pepper to taste.

Serve
Serve the potato hash topped with sunny side up eggs and generously ladle the sausage gravy over the top. Garnish with crispy bacon.
