Method

Preparing the Dough

  1. 1

    Mixing Ingredients

In a large mixing bowl, combine flour, salt, sugar, and instant yeast. In a separate bowl, mix warm milk and water. Add the melted butter to the milk-water mixture and combine.

  2. 2

    Kneading the Dough

Pour the liquid mixture into the dry ingredients and mix until a shaggy dough forms. Knead on a floured surface for about 8-10 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

Incorporating Butter

  1. 3

    Prepare Butter Layer

While the dough is rising, take the cold butter and pound it between two sheets of parchment paper until it forms a 6-inch square. Refrigerate until ready to use.

  2. 4

    Rolling the Dough

Once the dough has risen, roll it out on a floured surface into a large rectangle (about 12x24 inches). Place the cold butter layer in the center of the dough and fold the sides over to encase the butter completely.

  3. 5

    Laminate the Dough

Roll the dough into a long rectangle again and fold it into thirds (like a letter). Wrap in plastic wrap and refrigerate for 30 minutes. Repeat this rolling and folding process two more times.

Shaping and Baking

  1. 6

    Cutting and Shaping

After the final fold, roll the dough into a large rectangle and cut it into triangles. Starting from the wide end, roll each triangle tightly to form a croissant shape.

  2. 7

    Proofing

Place the shaped croissants on a baking sheet lined with parchment paper, cover, and let rise for about 1 hour until puffy.

  3. 8

    Egg Wash

Preheat the oven to 400°F (200°C). In a small bowl, whisk together the egg and milk. Brush the mixture over the croissants.

  4. 9

    Baking

Bake the croissants for 15-20 minutes or until golden brown. Remove from the oven and allow to cool slightly before serving.
