    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels. Once cooled, chop into pieces.

    Cook the Potatoes

    In the same skillet, add diced potatoes and cook until golden and tender, about 10-15 minutes. Season with salt, pepper, and paprika. Remove from skillet and set aside.

    Sauté the Peppers

    Add diced bell pepper to the skillet and sauté until soft, about 3-5 minutes.

    Scramble the Eggs

    In a bowl, whisk the eggs and season with salt and pepper. Pour into the skillet and scramble until cooked through.

    Assemble the Burritos

    On each tortilla, layer scrambled eggs, bacon, sautéed peppers, salsa, and pepper jack cheese. Roll up tightly and serve warm.
