Prepare the Dough
In a large bowl, combine warm water and yeast. Let it sit for about 5 minutes until it becomes frothy. Add the flour and salt, and mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour.

Shape the Bread
Once the dough has doubled in size, punch it down and divide it into two equal pieces. Roll each piece into a flat oval shape about 1/2 inch thick.

Add Toppings
Brush the top of each flattened dough with olive oil and sprinkle generously with za'atar and sesame seeds.

Bake the Bread
Preheat the oven to 450°F (230°C). Place the shaped bread on a baking sheet lined with parchment paper. Bake for 10-12 minutes until golden and puffed.

Cool and Serve
Remove from the oven and let cool slightly before serving. This bread pairs wonderfully with whipped yellow lentils and pumpkin.
