Add Spices
Stir in cumin, coriander, smoked paprika, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant.

Simmer the Beef
Add the tamarind paste and enough water to cover the beef. Bring to a boil, then reduce the heat, cover, and let it simmer for about 1.5 to 2 hours, or until the beef is tender.

Prepare the Smoky Eggplant Purée
While the beef is cooking, preheat your oven to 200°C (400°F). Cut the eggplant in half, brush with olive oil, and place it cut-side down on a baking sheet. Roast for about 30 minutes until the skin is charred and the flesh is soft.

Blend the Purée
Remove the eggplant from the oven and scoop out the flesh into a food processor. Blend until smooth, adding olive oil, salt, and pepper to taste.

Serve
Once the beef is tender, serve it over the smoky eggplant purée, topped with fresh basil leaves.
