Steam the butternut squash until tender, about 15 minutes. Let it cool slightly, then mash it in a bowl until smooth.

In a large bowl, combine the mashed butternut squash, crumbled Manouri cheese, flour, egg, salt, and pepper. Mix until a dough forms.

Dust a clean surface with flour, and roll the dough into small balls, about the size of a walnut.

Bring a large pot of salted water to a boil. Carefully drop the dumplings into the boiling water, cooking for about 5 minutes or until they float to the surface. Remove and set aside.
