    Prepare the Cauliflower

    Preheat the oven to 425°F (220°C). Toss the cauliflower florets with 2 tablespoons of olive oil, salt, and pepper. Spread them out on a baking sheet and roast for about 25 minutes, or until golden and tender.

    Caramelize the Onions

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized, about 15-20 minutes. Set aside.

    Crispy Mushrooms

    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and sauté on high heat until they are crispy, about 10 minutes. Season with salt and pepper.

    Toast the Pine Nuts

    In a dry skillet over medium heat, toast the pine nuts until golden brown, about 3-5 minutes. Stir frequently to avoid burning.

    Prepare the Yogurt Sauce

    In a bowl, mix the yogurt with minced garlic, ground cumin, salt, and pepper to taste. Adjust seasoning if needed.

    Assemble the Fatteh

    In a serving dish, layer the roasted cauliflower, caramelized onions, crispy mushrooms, and yogurt sauce. Top with toasted pine nuts and chopped parsley. Serve warm.
