House-made watermelon lime mint purée (makes ~2 cups)
Method
House-made watermelon lime mint purée
Place the cubed watermelon, fresh lime juice, mint leaves, and granulated sugar into a blender. Blend on high until completely smooth, about 30–45 seconds.
Taste and adjust sweetness or acidity: add up to 1 tbsp more sugar or 1–2 tsp more lime juice as needed. If the purée is too thick, add cold water 1 tablespoon at a time until it reaches a pourable consistency.
Optional: For a silky texture, pour the purée through a fine-mesh strainer into a bowl, pressing with a spoon to extract the liquid and leaving behind pulp and mint stems. Chill the strained purée in the refrigerator for at least 15 minutes before using.
Yield: about 1 3/4–2 cups. Store refrigerated in an airtight container for up to 48 hours.
Assembling the Watermelon Refresher
Muddle blueberries
Place 4 of the fresh blueberries in the bottom of a cocktail shaker or mixing glass. Lightly muddle them to release juice and flavor, but avoid pulverizing the seeds (6–8 gentle presses).
Add ingredients: Add 2 oz Tito's Vodka and 3 oz of the chilled house-made watermelon lime mint purée to the shaker with the muddled blueberries.
Add ice: Fill the shaker halfway with crushed ice (about 1 cup) and shake vigorously for 10–12 seconds to chill and slightly dilute the mixture.
Garnish and finish: Thread the remaining 2 fresh blueberries onto a cocktail pick and place on the glass, and slap a small sprig of mint between your palms to release aroma and tuck it into the drink. Optionally, add a thin lime wheel on the rim.
Serve immediately with a straw.
