Prepare glass

If you prefer a chilled glass, place a coupe or chilled rocks glass in the freezer for a few minutes or fill it with ice water while you prepare the cocktail. Discard the ice water before straining the drink.

Optional muddle

If using fresh pineapple for extra fruit intensity, place one small pineapple slice in the shaker and gently muddle 1–2 times to release juice and aroma. Do not over-muddle into a pulp.

Combine ingredients

Add 2 oz Plantation Pineapple Rum, 1 oz freshly squeezed lime juice, and 0.75 oz simple syrup into a cocktail shaker.

Add ice and shake

Fill the shaker with ice (about 1 cup). Secure the lid and shake vigorously for 12–15 seconds until the outside of the shaker is very cold and slightly frosted. This chills and slightly dilutes the drink to balance the flavors.

Strain

Double-strain the cocktail into the chilled coupe or a rocks glass over fresh ice (if you prefer it on the rocks). Use a fine mesh strainer if you muddled pineapple to remove solids.

Garnish and serve

Garnish with a lime wheel or a small pineapple wedge on the rim. Serve immediately.
