Cooking Quinoa

    Rinse and Cook Quinoa

    Rinse 1 cup of organic quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes. Fluff with a fork.

Preparing Plantains

    Slice and Fry Plantains

    Peel the sweet plantains and cut them diagonally into 1-inch thick slices. In a large skillet, heat 2 tablespoons of oil over medium heat. Once hot, add the plantain slices and fry them for about 3-4 minutes on each side or until golden brown and caramelized. Remove from skillet and drain on a paper towel.

Sauté Spinach

    Cook Spinach

    In the same skillet used for the plantains, add a little more oil if necessary. Add 4 cups of fresh spinach and sauté over medium heat for about 2-3 minutes or until wilted. Season with salt and pepper to taste.

Assembling Tacos

    Build the Tacos

    In a serving dish, layer the cooked quinoa as the base. Top with sautéed spinach, fried plantains, and a generous spoonful of pico de gallo. Drizzle with balsamic glaze over the top for added flavor.
