Prepare the Oysters

    Shuck the Oysters

    Carefully shuck the Blue Point oysters and place them on a platter with ice to keep them fresh.

    Prepare the Breading

    In a bowl, combine corn meal, all-purpose flour, salt, and black pepper. In another bowl, whisk together eggs and buttermilk.

    Bread the Oysters

    Dip each oyster in the egg mixture, then coat with the corn meal mixture, ensuring they are fully covered.

    Fry the Oysters

    Heat vegetable oil in a deep skillet over medium heat. Fry the breaded oysters in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.

Make the Mofongo

    Fry the Plantains

    Peel the green plantains and cut them into 1-inch thick slices. Heat olive oil in a skillet over medium heat and fry the plantain slices until golden, about 3-4 minutes per side.

    Mash the Mofongo

    In a mortar and pestle or a bowl, mash the fried plantains with garlic cloves, salt, pork cracklings, and chicken broth until you achieve a chunky consistency.

    Shape the Mofongo

    Shape the mashed plantain mixture into balls or mounds and set aside.

Prepare the Toppings

    Caramelize the Onions

    Slice the Spanish onion thinly. In a skillet, cook over medium heat in a little olive oil until soft and caramelized, about 15 minutes.

    Cook the Pancetta

    In the same skillet, add pancetta and cook until crispy. Remove from heat.

Assemble the Dish

    Plate the Mofongo

    Place a mound of mofongo on each plate.

    Add the Oysters

    Top each mofongo mound with 2-3 fried oysters.

    Garnish

    Add the caramelized onions and crispy pancetta over the oysters. Drizzle with chipotle aioli and sprinkle fresh cilantro on top.
