Corn Patties

    Prepare the Corn Mixture

    In a large bowl, mix the cornmeal, water, and salt until a smooth dough forms.

    Shape the Patties

    Divide the dough into equal portions and shape each portion into a flat, round patty.

    Fry the Patties

    In a large skillet, heat the vegetable oil over medium heat. Fry each patty until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

Roasted Vegetables

    Prepare the Vegetables

    Preheat the oven to 425°F (220°C). Chop the zucchini, red bell pepper, and red onion into bite-sized pieces.

    Season and Roast

    In a mixing bowl, toss the chopped vegetables with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 20-25 minutes, until tender and slightly charred.

Caramelized Onions

    Cook the Onions

    In a skillet, melt the butter over medium heat. Add the sliced yellow onions and cook, stirring occasionally, for about 10 minutes.

    Add Sugar and Continue Cooking

    Sprinkle the sugar over the onions and continue to cook for another 10-15 minutes until they are deeply caramelized and golden.

Assemble the Huaraches

    Layer the Ingredients

    On each corn patty, layer the roasted vegetables, followed by the caramelized onions, and crumbled goat cheese.

    Add Glaze

    Drizzle the fig jam and balsamic glaze over the top of each huarache.
