Prepare Rice
1. Cook the Rice
In a medium saucepan, combine 1 cup of long grain white rice, 2 cups of water, and 0.5 tsp of salt. Bring to a boil over medium-high heat.
2. Simmer
Once boiling, reduce the heat to low, cover with a lid, and let it simmer for about 18-20 minutes or until the rice is tender and water is absorbed. Remove from heat and fluff with a fork.
Prepare Beans
3. Heat the Beans
In a small saucepan, heat 1 cup of canned black beans over medium heat. Add 1 tsp of garlic powder, 0.5 tsp of cumin, and 0.5 tsp of salt. Stir occasionally until heated through.
Cook Protein
4. Prepare Your Protein
If using chicken, ensure it is cooked and shredded. If using ground beef, cook it in a skillet until browned. If using tofu, cube it and sauté in a little oil until golden brown.
Assemble Burrito
5. Fill the Tortilla
Lay the large flour tortilla flat on a clean surface. In the center, add a portion of the cooked rice, followed by the heated black beans, and your choice of prepared protein.
6. Add Toppings
If desired, add toppings such as shredded cheese, sour cream, salsa, chopped lettuce, and diced tomatoes on top of the filling.
7. Wrap the Burrito
Fold in the sides of the tortilla and then roll it from the bottom up, ensuring the filling is enclosed. Place seam-side down to hold its shape.
