Arepas

Pickled Onions

Guasacaca Sauce

Method

Arepas

  1. 1

    Prepare the arepa dough

In a large bowl, combine the corn flour, water, and salt. Mix until a smooth dough forms. Let it rest for about 10 minutes.

  2. 2

    Shape the arepas

Divide the dough into 8 equal parts and shape each into a disc, about 1/2 inch thick.

  3. 3

    Cook the arepas

Heat a skillet over medium heat and add a tablespoon of vegetable oil. Cook each arepa for about 5-7 minutes on each side, until golden brown and slightly crispy. Set aside.

Smoked Pulled Pork

  1. 4

    Prepare the pork

Season the pork shoulder with smoked paprika, garlic powder, onion powder, salt, black pepper, and liquid smoke. Rub the spices all over the pork.

  2. 5

    Cook the pork

Place the seasoned pork in a slow cooker and cook on low for 8 hours or until the meat is tender and easily pulled apart.

  3. 6

    Shred the pork

Once cooked, remove the pork from the slow cooker and shred it using two forks. Mix in the BBQ sauce until well combined.

Pickled Onions

  1. 7

    Prepare the onions

Slice the red onion thinly and place in a jar.

  2. 8

    Make the pickling solution

In a saucepan, combine white vinegar, sugar, and salt. Bring to a simmer until the sugar and salt dissolve.

  3. 9

    Pickle the onions

Pour the hot pickling solution over the onions in the jar. Let it cool to room temperature, then refrigerate for at least 1 hour before serving.

Guasacaca Sauce

  1. 10

    Blend the ingredients

In a blender, combine avocado, cilantro, garlic, lime juice, olive oil, and salt. Blend until smooth and creamy.

  2. 11

    Adjust seasoning

Taste the sauce and adjust salt if necessary. Set aside until ready to serve.
