Method
Red Velvet Ice Cream

Prepare custard base
In a medium saucepan, combine the whole milk, 3/4 cup granulated sugar, unsweetened cocoa powder, and salt. Warm over medium heat until just simmering, stirring to dissolve the sugar and cocoa—do not boil.

Cook custard
Cook the mixture over medium-low heat, stirring constantly with a wooden spoon or heatproof spatula, until it thickens slightly and coats the back of the spoon (about 6–8 minutes, reaching ~170–175°F if using a thermometer). Remove from heat.

Melt white chocolate
Immediately add the finely chopped white chocolate to the hot custard and stir until fully melted and smooth. If using invert sugar or cornstarch, whisk them in now.

Finish and chill
Stir in the heavy cream, vanilla extract, and red food coloring until evenly distributed and the mixture turns a vivid red. Strain the custard through a fine-mesh sieve into a bowl to remove any cooked bits. Cover the surface with plastic wrap and refrigerate until thoroughly chilled, at least 4 hours or overnight.

Churn
Once chilled, churn the custard in your ice cream maker according to the manufacturer's instructions until it reaches soft-serve consistency. Transfer to a container and freeze at least 2 hours to firm up to scoopable texture.

Prepare chocolate coating
Place the semisweet chocolate chips and coconut oil in a heatproof bowl. Melt gently over a double boiler or in 20–30 second bursts in the microwave, stirring until smooth and glossy.

Apply Oreo coating
While the chocolate is still wet, sprinkle or press crushed Oreo crumbs onto the chocolate-coated area to create a textured coating. Gently tap off any loose crumbs. Stand jars upright and refrigerate for 10–15 minutes to set the chocolate.
Assemble Red Velvet Cake Slices

If using homemade or store-bought cake, cut into small single-serving slices that will sit on top of each jar. Optionally spread or pipe a thin layer of cream cheese frosting on each slice so they look finished and match the dessert.
Toppings & Final Assembly

Scoop ice cream into jars
Spoon or scoop 2 generous scoops of firmed-up red velvet ice cream into each prepared chocolate-iced jar (about 6–8 oz of ice cream per jar). Tap jars gently to settle the ice cream without compressing too much.

Add whipped cream
Top each jar with a generous swirl of whipped cream (about 1/2 cup per jar). Use a piping bag or spoon for a neat presentation.

Place cake slice and garnishes
Carefully rest one red velvet cake slice on top of the whipped cream at a slight angle. Insert 2 Pocky sticks into the ice cream near the cake slice. Stick a playful plastic shovel into the whipped cream. Place a mini chocolate syringe beside the cake slice (so the guest can inject extra chocolate if desired).

Drizzle and finish
Drizzle chocolate sauce over the whipped cream, cake slice, and Pocky sticks. Sprinkle edible red sprinkles and press a few extra Oreo crumbs on the whipped cream for contrast. Serve immediately with a small spoon and napkin for the plastic syringe.

If assembling ahead, keep the chilled jars covered in the refrigerator (without whipped cream and cake slice) for up to 24 hours. Add whipped cream, cake slice, and syringes immediately before serving to preserve texture.
