Broth Preparation

Prepare the Broth
In a large pot, add the pork bones and cover with water. Bring to a boil and then reduce to a simmer. Skim off any scum that rises to the surface.

Season the Broth
Once the broth is rich and flavorful, stir in the soy sauce, mirin, and salt to taste. Let it simmer for another 15 minutes.

Strain the Broth
Remove the pot from heat and strain the broth through a fine mesh sieve to remove the solids. Return the liquid to the pot and keep warm.
Noodle Preparation

Cook the Ramen Noodles
In a separate pot, bring water to a boil. Add the ramen noodles and cook according to package instructions, usually around 3-4 minutes. Drain and set aside.
Assembling the Ramen

Prepare the Toppings
Slice the chashu pork, chop the green onions, and prepare the soft-boiled eggs by boiling them for 6-7 minutes, then plunging them into an ice bath.

Assemble the Ramen Bowl
In a large bowl, place a portion of the cooked ramen noodles. Ladle the hot broth over the noodles. Top with slices of chashu, halved soft-boiled eggs, chopped green onions, nori sheets, and bok choy.

Serve the ramen hot and enjoy!
