Mochi Dough Preparation

Mix Dry Ingredients
In a mixing bowl, combine the sweet rice flour, sugar, and salt. Mix well.

Add Water
Gradually add water to the dry mixture while stirring continuously until the mixture is smooth and free of lumps.

Cook the Mixture
Transfer the mixture to a microwave-safe bowl. Cover it loosely with a lid or plastic wrap and microwave on high for 1 minute. Stir, cover, and microwave for another minute. Repeat this process for a total of 3 minutes, stirring after each minute, until the dough becomes thick and slightly translucent.

Dust Surface with Cornstarch
While the mochi dough is still warm, dust a clean surface with cornstarch to prevent sticking.

Knead the Dough
Transfer the dough onto the cornstarch-dusted surface and knead for a few minutes until it is smooth and pliable. Be careful as it may be hot.

Roll Out the Dough
Roll the dough out to about 1/4 inch thick. Use a round cutter (approximately 3 to 4 inches in diameter) to cut out circles of mochi.
Assembly

Fill with Ice Cream
Scoop approximately 1-2 tablespoons of your chosen ice cream and place it in the center of each mochi circle.

Wrap the Mochi
Carefully fold the edges of the mochi circle over the ice cream, pinching to seal. Make sure the ice cream is completely enclosed.

Freeze the Mochi
Place the filled mochi on a parchment-lined tray and freeze for at least 2 hours, or until firm.
