Method

Preparing the Pork Collar

    Season and Sear

    Rub the pork collar with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Sear the pork on all sides until browned, about 3-4 minutes per side.

    Cook the Pork

    Transfer the seared pork collar to a preheated oven at 325°F (160°C) and roast for 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C). Let it rest for 10 minutes before slicing.

Making the Fig and Black Garlic Sauce

    Combine Ingredients

    In a saucepan, combine chopped figs, minced black garlic, balsamic vinegar, and honey. Cook over medium heat until the figs soften and the mixture thickens, about 10-15 minutes. Season with salt and pepper to taste.

Preparing the Peperonata

    Sauté Vegetables

    In a skillet, heat olive oil over medium heat. Add sliced bell peppers and onion, and sauté until softened, about 5-7 minutes. Stir in minced garlic and tomato paste, cooking for an additional 2-3 minutes. Season with salt and pepper to taste.
