Prepare the Ingredients

Rinse the McGinnis ranch shelling beans under cold water and soak them in water for at least 2 hours. Drain and set aside. Chop the lamb bacon into small pieces. Dice the Walla Walla onion and slice the lobster mushrooms.

Cooking

Cook the Lamb Bacon

In a large pot, heat the olive oil over medium heat. Add the lamb bacon and cook until crispy, about 5-7 minutes.

Sauté the Vegetables

Add the diced Walla Walla onions to the pot and sauté until translucent, about 3-4 minutes. Then add the sliced lobster mushrooms and cook for an additional 5 minutes.

Cook the Beans

Add the soaked shelling beans to the pot along with 4 cups of water. Bring to a boil, then reduce the heat and let simmer, covered, for about 45 minutes or until the beans are tender.

Season and Serve

Once the beans are cooked, season with salt, black pepper, and fresh thyme. Stir well and serve hot.
