Prepare the Ingredients
Gather all the ingredients: rye bread, corned beef, shredded cabbage, pepper jack cheese, Thousand Island dressing, and butter.

Assemble the Sandwich
On two slices of rye bread, spread 1 tablespoon of Thousand Island dressing on each slice. Layer the corned beef evenly over the dressing on one slice, then add the shredded cabbage and place the pepper jack cheese on top.

Complete the Sandwich
Top with the second slice of rye bread, dressing side down, to form a sandwich.

Toast the Sandwich
Heat 1 tablespoon of butter in a skillet over medium heat. Once melted, place the sandwich in the skillet and cook for about 3-4 minutes until the bottom is golden brown.

Flip and Cook the Other Side
Spread the remaining tablespoon of butter on the top slice of the sandwich. Carefully flip the sandwich and cook for another 3-4 minutes, until the second side is golden brown and the cheese is melted.

Serve
Remove the sandwich from the skillet, cut it in half, and serve hot with additional dressing if desired.
