    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly under cold water to remove any dirt. Pat them dry with a paper towel.

    Bake the Potatoes

    Prick each potato several times with a fork to allow steam to escape. Rub each potato with olive oil and sprinkle sea salt over them. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

    Cool and Cut the Potatoes

    Once baked, remove the potatoes from the oven and let them cool for about 10-15 minutes. Carefully cut each potato in half lengthwise and scoop out a portion of the flesh, leaving about 1/4 inch of potato inside the skin.

    Season the Potato Skins

    Brush the inside of each potato skin with a little more olive oil, then sprinkle with black pepper. Place the skins cut-side up on a baking sheet.

    Add Cheese and Bacon

    Fill each potato skin with cheddar cheese and crumbled bacon. Make sure to pack them generously.

    Bake Again

    Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove the potato skins from the oven and garnish with chopped green onions. Serve hot with sour cream on the side.
