Prepare the Beef
Season the beef chuck roast with salt and black pepper on all sides.

Sear the Meat
In a large skillet or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the beef roast and sear it for about 4 minutes on each side until browned. Remove the roast and set aside.

Add the Liquid Ingredients
Pour in the beef broth, scraping up any browned bits from the bottom of the pot. Add thyme and bay leaf.

Cook the Roast
Return the beef chuck roast to the pot. Bring the mixture to a simmer, cover, and reduce the heat to low. Cook for about 3 hours or until the meat is tender and easily shredded.

Shred the Beef
Once cooked, remove the beef from the pot and let it rest for a few minutes. Shred the beef into bite-sized pieces.

Prepare the Rolls
Preheat the oven to 350°F (175°C). Slice the French bread rolls in half and place them on a baking sheet.

Assemble the Sandwiches
Add shredded beef to the bottom half of each roll and top with a slice or two of provolone cheese.

Place the baking sheet in the oven and bake for about 5-7 minutes, or until the cheese is melted and the rolls are lightly toasted.

Serve the sandwiches hot with a small bowl of the beef broth (au jus) for dipping.
